Maglio’s ripening rooms are carefully controlled for temperature and humidity to support optimal ripening. That means product can be managed more consistently and delivered closer to your ideal spec.

Stage 1
Hard - 4 Days till Ripe
Very hard fruit. Usually light green color.

Stage 2
Breaking - 2+ Days till Ripe
Slight give to fruit. Ready to eat in approximately 2 days if kept at room temperature.

Stage 3
Firm Ripe - 1+ Days till Ripe
Yields to pressure. Good for slicing. ready to eat in next day if kept at room temperature.

Stage 4
Ripe
Easily yields to gentle pressure. Ready for all uses. Will remain ripe for 2-3 days if kept at room temperature.
