Beefsteak

Large size and meaty texture, have a classic tomato flavor. Depending upon the variety, they can also be sweet to the taste. They are heavy, reaching weights as high as four pounds, and they range in color from pink, to vibrant red, to orange.

Heirloom

An open-pollinated (non-hybrid) heirloom cultivar of tomato. According to tomato experts, heirloom tomatoes can be classified into four categories: family heirlooms, commercial heirlooms, mystery heirlooms, and created heirlooms.

Organic

This is the gold standard among food-labeling terms. Certified organic crops generally cannot be produced using synthetic fertilizers, pesticides or genetically modified organisms.

Ripening Guide

  • Stage 2 – Mature Green:
    Firm, green tomatoes with no visible pink; ideal for shipping long distances.

  • Stage 2.5 – Breaker:
    Slight blush of pink on less than 10% of the surface; ripening has begun.

  • Stage 3 – Turning:
    10–30% pink to red coloration; fruit is still firm and continues to ripen.

  • Stage 3.5 – Partial Pink:
    More uniform color development (30–60%) with good shipping potential.

  • Stage 4 – Pink:
    60–90% of the surface shows color; excellent balance of shelf life and ripeness.

  • Stage 4.5 – Light Red:
    Nearly fully red but still firm; ready for short-haul distribution.

  • Stage 5 – Red:
    Fully red, flavorful, and softening slightly; best for local or immediate use.

  • Stage 5.5–6 – Deep Red:
    Maximum color, softness increases; ideal for slicing or high-turnover displays.
