Mediterranean Fish With Tapenade
This Mediterranean Fish Recipe is packed full of flavor! Seasoned with salt and pepper and topped with a simple tomato tapenade recipe you’ll be enjoying this fish recipe often.
- 2 C NatureSweet Cherubs® sliced in half
- 1/2 c sun-dried tomatoes chopped
- 1/2 red onion diced
- 4 bay leaves chopped
- 1 tsp dried oregano
- 1/4 c black olives pitted and halved
- 1 tsp garlic minced
- 1 tbsp capers
- 1 tsp anchovy paste
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 4 white fish fillets
- salt and pepper to taste
- lemon wedges to serve

Start by making the
tapenade. Place all of the ingredients into a medium size bowl or place in a food processor and pulse a few times until chopped. Set aside.

In a skillet, coat with olive oil. Season both sides of your fish with salt and pepper. Place the fish in a hot skillet over medium high heat and cook for 3-4 minutes per side, until golden brown.

Remove the fish and top with the tomato tapenade. Serve with lemon wedges and enjoy!
