Mediterranean Fish With Tapenade

This Mediterranean Fish Recipe is packed full of flavor! Seasoned with salt and pepper and topped with a simple tomato tapenade recipe you’ll be enjoying this fish recipe often.


  • 2 C NatureSweet Cherubs® sliced in half
  • 1/2 c sun-dried tomatoes chopped
  • 1/2 red onion diced
  • 4 bay leaves chopped
  • 1 tsp dried oregano
  • 1/4 c black olives pitted and halved
  • 1 tsp garlic minced
  • 1 tbsp capers
  • 1 tsp anchovy paste
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 4 white fish fillets
  • salt and pepper to taste
  • lemon wedges to serve


  1. Start by making the tapenade. Place all of the ingredients into a medium size bowl or place in a food processor and pulse a few times until chopped. Set aside.
  2. In a skillet, coat with olive oil. Season both sides of your fish with salt and pepper. Place the fish in a hot skillet over medium high heat and cook for 3-4 minutes per side, until golden brown.
  3. Remove the fish and top with the tomato tapenade. Serve with lemon wedges and enjoy!
